Quick and easy, elegant dinner for Valentine's Day dinner is chicken crepes. What makes this dinner quick and easy? You use flour tortillas instead of homemade crepes.
I use about 3 cups rotisserie chicken and just make a quick cream sauce with butter, white wine and cream. I put mushrooms in mine, and if I'm in the mood for curry, I add that too. I put a small amount of cream sauce in the chicken to keep it moist. Put a flour tortilla flat on your work surface, put about ½ cup chicken on one side of tortilla and roll up, place in a buttered 9 X 13 pan. Continue rolling tortillas and chicken, this amount will give you 6 crepes. Sprinkle mushrooms over crepes, sprinkle about 1 cup shredded cheddar cheese over crepes, then pour cream sauce over, bake at 350 until hot and bubbly.
I like to start this meal with a nice salad and warm bread, then serve with green beans or broccoli and some form of cranberry sauce or relish. The colors make this meal look as good as it tastes, very little work, very little mess and lots of time for romance.
To make this extra special, stop in for a bottle of our Stained Chardonnay. The beautiful color of this wine, along with the slightly peppery, red wine like finish will pair beautifully with the creamy chicken and will carry right over into a dessert of fresh strawberries and whipped cream! Enjoy!
